Red Wine Fudge Brownies - Vegan/Gluten Free

These are AMAZING!!!!!!!! Perfect for a get together or just some deliciousness at home. You can't tell they have alternative ingredients.

1/2 cup aquafaba (juice from a can of chickpeas)
1/4 tsp cream of tartar
2/3 cup granulated sugar
1/3 cup packed brown sugar

1/4 c unsalted vegan butter
about 4 oz (half a bag) bittersweet chocolate
3/4 cup cocoa powder
3/4 cup gluten free flour blend
1/2 tsp salt
1 tsp vanilla extract
1/4 c red wine

Preheat oven to 350 degrees and place parchment paper in an 8 x 8 dish with extra paper on each side like handles for easy removal.

Heat butter and chocolate in a small sauce pan on the stove and melt. Once melted set aside.

Next, make meringue. Pour aquafaba into mixer with whisk attachment and which on medium speed for a few minutes then add cream of tartar, whisking for another 5 minutes. Increase speed to medium/high and whisk for another five. Your mixture should create firm peaks. Slowly add in granulated and brown sugar one tablespoon at a time, mixing for an additional 3 to 5 minutes.

Sift cocoa powder, flour, salt in a medium bowl and pour cocoa powder directly onto meringue mixture. Then pour melted chocolate mixture, vanilla and red wine. DO NOT MIX VIGOROUSLY, gently fold batter (macaronage style - folding batter as if you were making macarons) this helps the air stay within the batter. Gently fold until mixed together.

Bake for 40 minutes or until toothpick/knife inserted in center comes out clean with a few crumbs.
