THE FRUIT FAST

Here are some of the recipes for what I made at the meetings involving the fruit fast! 


Tabbouleh Salad - no wheat. 
Large bunch of parsley, chopped
2 cucumbers, chopped 
Small container cherry tomatoes, chopped
Juice of two lemons
2 tablespoons olive oil
Salt and pepper 

Mix together and season to taste. 



Grilled Eggplant Steak



Large eggplant
Sundries tomatoes or roasted tomatoes
Kalamata Olives 
Chopped parsley
Olive oil

Slice eggplant lengthwise into long 1inch steaks cover with olive oil and salt and pepper and grill on each side about 5 minutes each side (depending on thickness). Top with tomatoes, olives, parsley, and oil. Season to taste with salt and pepper. 


Zucchini and Tomato Curry Soup 


1 cup raw cashews with 3/4 cup water
2 zucchini, chopped
4 tomatoes, chopped
2 tablespoons curry powder
1/2 teaspoon turmeric
1 tablespoon cumin
2 cups vegetable broth 

Place cashews in water let soak for an hour or longer. Heat olive oil or coconut oil on skillet and cook zucchini and tomatoes until tender. Stir in spices and let cool an additional 2 minutes. Blend cashews and water in a blender on high until creamy paste forms (about 3 minutes) and store cashew cream into veggies. Pour in broth and let simmer about 15 minutes. You can also add parsley. Season to taste with salt and pepper. 

Creamy Basil and Peach Sorbet 
1 cup almond milk
Bag of frozen peaches (or 4 fresh peaches and 2 cups ice) 
2 tablespoons chopped basil

Put in blender and blend until smooth. Serve immediately or put in freezer.
