December's Monthly Intention


Vegan/ Gluten Free Protein Bars with Chocolate Drizzle


-1 1/2 cup gluten free oats - blended into flour
- 2 scoops vegan protein flour (I used chocolate, can use any flavor that you like)
-1/2 cup rice cereal or GF Cheerios
- 1/4 tsp salt
- 1/2 cup nut butter (I used homemade peanut butter)
- 1/2 cup agave nectar
- 1 tsp vanilla
-1/4 c vanilla almond milk

Mix oats, protein, cereal, and salt in a large bowl. Head nut butter in microwave just until slightly warm and add to dry mixture along with remaining ingredients. If mixture is still rather dry add more almond milk.

Place parchment paper along bottom of rectangular dish. Pour into dish, and press mixture down with roller or with spoon until smooth. Place dish in freezer for about 15 minutes

Chocolate Drizzle
-1/2 cup Enjoy Life Brand chocolates (or other non dairy/vegan chocolate)
- 1 tbs coconut oil

Place chocolate and oil in sauce pan over medium low heat and stir until mostly melted. Remove from heat and continue to stir until mixture is completely liquid.

Remove pan from freezer and cut into bars. Place bars on parchment paper and drizzle with chocolate. And put bars back into freezer. Once set you can keep bars in the freezer or in an air tight back in the refrigerator.
