Sweet BBQ Meatballs - Gluten Free/Dairy Free/ Egg Free

These meatballs were seriously delicious! This was a Pioneer Woman recipe that I changed up a little.

- Meatballs
  • 1 1/2 pound of ground beef
  • 3/4 cup GF oats
  • 1 cup unsweetened almond milk
  • a few tablespoons minced yellow onion
  • salt and pepper
  • a few tablespoons of canola oil
  • 1/2 to 3/4 cup gluten free flour
  • 1 cup ketchup
  • 1/2 cup minced onions
  • 3 tablespoons white vinegar
  • 2 tablespoons sugar (if you like your sauce sweet)
  • 2 tablespoons Worcestershire sauce
  • dash of hot sauce (if you like it hot *wink*)

Starting with the meatballs, mix the ground beef and oats together, leaving the oats whole.

Next, add in the onion, almond milk, salt and pepper and stir well.

Roll the mixture into balls and place on a plate. Refrigerate for about 30-45 minutes to help them firm.

Next Preheat the oven to 350 degrees. Begin heating the canola oil in a skillet over medium heat. Dredge (put the meatballs in flour and coat) the meatballs and brown them in batches until light brown. After browning, place in baking dish (I used a casserole dish).

To make the sauce, stir together all remaining ingredients and drizzle over the meatballs evenly.

Bake until sauce is bubbly and melted onto meatballs about 45 minutes.

I served with some steamed green beans. Now make this and shove all of those meatballs in your mouth because they are that good. And, these would be a great item to bring to a potluck or party. Super easy and super good.
