Orange Vanilla Vinaigrette Dressing



My hubby called this the pudding of salad dressing, so I can only assume he loved it. I got this out of the Vitamix recipe book. Its seriously amazing for a spring salad. I think it would be a really awesome marinade for chicken as well.





Ingredients:
  • 2 oranges - peeled, halved and seeded
  • 1 lemon - peeled, halved and seeded
  • 1 tablespoon apple cider vinegar
  • 1 1/2 teaspoon vanilla
  • 1 tablespoon honey
  • salt and pepper
  • a dash of hot sauce if you want a little spice
  • 1 1/2 c extra virgin olive oil

Using a blender or food processor (Or Vitamix, obviously since this was from the cookbook) combine all except olive oil and blend. Going from 1 to a 4 on the Vitamix for about 20 seconds and back down. Add the olive oil slowly while blending at a low speed until the dressing is emulsified.



Seriously so yummy. It made quite the batch, so I am freezing half of it and I might have to use it as a marinade later in the week.
