Ingredients:
- Box of Macaroni (I actually used GF)
- 4 potatoes, peeled and diced (about 1 cup)
- 3 carrots, peeled and diced (about 1/4 cup)
- 1 small yellow onion (about 1/3 cup)
- 3/4 cup water (use left over water from boiled veggies)
- 1/2 cup raw cashews
- 1/4 cup coconut milk (plus more if needed)
- 1 tablespoon lemon juice
- 3/4 teaspoon salt
- 1/4 teaspoon garlic powder
- pinch of cayenne pepper
- pinch of paprika
Cook macaroni ask directed on package, set aside. Bring pot of water to boil and place potatoes, carrots and onions in boiling water. Cook 10 or more minutes until veggies are tender (soft enough for blending). While veggies are cooking, place coconut milk and cashews in blender and blend until smooth. Add cooked veggies to cashew mixture along with 3/4 c left over water and remaining ingredients and blend until smooth. Pour over macaroni noodles and mix. Season with salt and pepper to taste.
You can also place in baking dish, sprinkle with bread crumbs and bake at 350 degrees for about 15 minutes.
