5 Year Anniversary Dinner - Flank Steak, Roasted Veggies and Bacon Wrapped Veggie Skewers



HOLY SMOKES its our 5 year wedding anniversary.......

For Dinner I made Flank Steak, Roasted Potatoes, Mushrooms and Onions, and Bacon wrapped Tomato and mushroom skewers with relish


Starting with Flank Steak... I used a meat tenderizer and let the steak marinate in olive oil, parsley, garlic salt, onion powder, and pepper. Then I used the indoor grill (due to rain) to cook the flank steak. When grilling the flank steak, make sure to leave it for a few minutes and rotate the steak a quarter turn to get nice grill marks. Then flip and do the same on the other side. (PS my indoor Le Creuset Grill Pan is a life saver and I use it ALL the time)




NEXT: the roasted potatoes. 
-Golden Potatoes
-Button and Oyster Mushrooms
-Yellow Onion
-Garlic Cloves
-Olive Oil
-Parsley
-Salt and Pepper

Preheat oven to 400 degrees. Spray your roasting pan with oil and cut your golden potatoes, onions, and mushrooms. Drizzle them with oil and roast for 25 minutes then take the pan out of the oven and use a spatula to stir. Roast again for an additional 15 minutes. 




This is my FAVORITE olive oil to use when roasting. It has such a great flavor


I ran out of fresh parsley....so my pictures don't look that great :(


Bacon Wrapped Tomato and Mushroom Skewers with Homemade Relish 

- Bacon (cut into halves or thirds)
-Cherry Tomatoes
- Button and Oyster Mushroom (Cut in half)
- 1/4 c Minced Pickles
-1/4 C chopped Parsley
- 1/4 c olive oil

For Marinade or topping: Mix pickles, parsley and oil together. Can use for marinade or just for a topping after cooking skewers.

Skewers: Wrap Tomatoes and mushrooms in bacon and place a few on the skewers and grill. Make sure to grill each side. 









Lastly we paired our meal with Quintessa's 2010 Red Blend, which is one of the wineries that we visited while in Napa and it is one of the wines that made Kyle and I become such wine people.
