Vegan Chocolate Chip Muffins


Ingredients:

  • 1/2 cup vegan butter, melted
  • 3/4 cup vegan buttermilk - I use 1/4 c lemon juice and 1/2 c coconut milk, whisk and let sit for about 5 min
  • 2/3 cup applesauce (or 2 eggs)
  • 1 TBS vanilla
  • 2 cups GF or Regular Flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups vegan chocolate chips

Preheat Oven to 350 degrees, and grease or line muffin pan.

Whisk butter, buttermilk substitute, applesauce or egg substitute and vanilla until smooth. 

In another bowl mix dry ingredients: flour, sugar, baking powder baking soda and salt. And using electric mixer on low mix wet and dry ingredients together until smooth. Using spatula fold in chocolate chips. Spoon batter into muffin pan, filling to rim or just above.

Bake for approximately 20 to 25 minutes, you can test using toothpick and inserting into the middle of the muffin and the toothpick should come out clean. Let muffins cool for about 5 minutes then release muffins from pan and let cool on rack completely.
