Perfectly Pear Muffins - Dairy/Casein/Egg Free




Ingredients:

  • 2 Cups Flour (can substitute One for One GF Flour here)
  • 1/2 Cup Sugar plus extra for topping
  • 1/2 Teaspoon Cardamom
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Cup + 2 Tablespoons Vanilla Almond Milk
  • 1/4 Cup Unsweetened Applesauce
  • 1/4 Cup Vegetable Oil
  • 1 Teaspoon Vanilla
  • 1 Cup peeled and diced pears (1 to 2 pears)
  • 1/2 Cup walnuts (optional)


Preheat oven to 350 degrees and grease 12 muffin cups or mini muffin pan. In a large bowl, sift together flour, sugar, cardamom, baking powder, baking soda, and salt. Make a well in the center of your dry ingredients. In a glass measuring cup, whip the almond milk, applesauce, oil, and vanilla. Pour liquid into well of dry ingredients. Gently stir ingredients together, just until they are moistened A few lumps are okay, do not over mix. Gently fold in diced pears and walnuts. 

Spoon batter into muffin cups, and sprinkle extra sugar over top each muffin. Bake for 18 to 22 minutes, or until they turn a golden color. You can test by inserting a toothpick and if it comes out clean then they are ready! Allow muffins to cool a bit before transferring to wire rack. 




(Can substitute apples, 1 tsp cinnamon and 1/2 cup brown sugar for pears and cardamom)
