Chicken and Corn Chowder - Dairy Free and Casein Free


* - About a 1/2 package of casein free Bacon (lets be honest cook the whole package because one never has leftover bacon)
- 1 large chopped and seeded red bell pepper
- Fresh or frozen corn kernels, about 4 cups or one small bag of frozen corn
- about 6 small Yukon gold potatoes cut into chunks
- 3 cups chicken broth
- 1/2 cup dry white wine
- 3/4lb of chicken (I used shredded chicken that I make to use for soups, stews, and such.....this recipe can also be used for chicken broth) can also use rotisserie chicken
- 6 green onions, white and pale green parts thinly sliced
- fresh thyme about 3 to 4 sprigs minced
*- 2 1/2 c half and half creamer
- salt and pepper

*these are the two items that need to be dairy free and casein free when cooking. You MUST look for casein free bacon, because most bacon contains casein. Also, you can substitute the half and half for soy creamer. (Just make sure your soy creamer is Non GMO)

In a saucepan over medium heat, fry the bacon until crispy (I prefer burnt, but thats my preference). Transfer bacon to plate with paper towel to drain. Pour out all but about 3 to 4 tablespoons of drippings.

Add the bell pepper, corn and potatoes to the same pan over medium heat. Cook, stirring frequently, until the peppers are softened and the corn and potatoes are a golden color. (About 5 minutes or so) Add the broth and wine, bring to boil and cover. Cook until potatoes are tender (another 5 minutes or so). Add the chicken and cover, cook another 7 minutes.

Stir in green onions, thyme and creamer of choice. Bring to simmer over medium heat, reduce the head to medium-low, and cook uncovered until heated through, about 3 to 5 minutes. Season to taste with salt and pepper. 

Spoon into bowls and sprinkle with bacon to serve.

DELICIOUS. It tastes as good as it looks.
